Seven Stars Shines with Three Prestige Cuvées + a South Okanagan Red.

With the 2025 harvest now complete, one of the winery’s largest on record, Township 7 is turning its attention to celebration season. And what better way than with bubbles? This year’s release showcases the precision and patience behind the seven stars sparkling program, highlighted by two beautifully matured expressions of 2017 SIRIUS and the vibrant, easy-drinking 2021 POLARIS. Rounding out the collection is a refined 2022 Cabernet Merlot built for winter gatherings.

Tasting Notes
Sirius 2017 is the crown jewel of the seven stars collection. It opens with a pale straw hue and fine, persistent bead, offering complex autolytic aromas of fresh brioche, biscuit, and subtle pastry over pristine tones of pear, baked apple, and honeycomb. The palate is creamy yet taut, with finely etched bubbles and vibrant acidity driving impressive clarity and length. A precise 5 g/L dosage from barrel-aged Chardonnay adds subtle richness without compromising tension.
Nuanced, balanced, and expressive of its cool-climate South Langley terroir, Sirius 2017 is a beautifully crafted sparkling wine with excellent cellaring potential. 93 Points
seven stars SIRIUS Late Disgorged 2017 – $79.97

This limited release—directly addressed in Mary’s letter—is distinguished by deeper autolytic character, heightened texture, and extraordinary lees-driven complexity.
Tasting Notes
Sirius 2017 LD shows the added richness and nuance that come from extended tirage. The nose is layered and expressive, with deep brioche, warm pastry, almond cream, and gently evolved fruit—baked apple, pear, and a touch of lemon peel.
The palate is silky and harmonious, carrying brioche, apple tart, and honeycomb with a fine, integrated mousse. The acidity feels rounded and fully melded into the texture, giving a softer, more seamless profile than the regular disgorgement. Elegant, savoury, and beautifully matured—classic LD finesse. 93 Points
