Evolve Pink EFFERVESCENCE NV ($21.99)

50% Pinot Blanc, 30% Merlot and 20% Chardonnay.  Evolve makes this wine by the Charmat Method, like Prosecco.  The base wine is added together with the sugar and yeast mixture into a large tank.  As the wine has a second fermentation, the carbon dioxide released by the fermentation causes the tank to pressurize.  The wine is then filtered, dosed and bottled without ageing.

Pale pink rose petals in colour.  Aromas of ripe red peach and flavours of watermelon, cherry and strawberries. Gold Medal winner at the All Canadian Wine Championship 2018.

CedarCreek Estate Pinot Noir Rosé 2019 ($18.99)

CedarCreek Estate Pinot Noir Rosé

The Pinot Noir for this wine is grown expressly for Rosé, which means it is picked earlier than it would be if it was destined for our Pinot Noir. This earlier picking results in more finesse and elegance in the wine. After being harvested, the grapes were destemmed and put in the press where they had two hours of skin contact before being pressed off. Fermentation was 100% stainless steel to allow for a fresh, crisp finished wine.

Perfumed apple blossoms, strawberry jam, lime and starfruit ride a lightly slicked glycerol palate. Fruit forward and refreshing – a perfect go-to every time. 90 Points.

Blue Grouse Quill Rosé 2019 ($24.99)

Blue Grouse Quill Rosé 2019 ($24.99)

The Gamay Noir continues to be the workhorse for the rosé. It was destemmed, crushed into the tank and left on skins for 24 hours before pressing. It was with that slightly higher acidity in mind, that we stopped fermentation to maintain a little more sweetness to achieve a better balance. After fermentation, the wine was settled, racked, and aged for another three months on fine fermentation lees.

Alcohol 11.5% | pH 3.3|  TA 7.8 | RS 4.1

Dirty Laundry Vineyard Hush Rosé ($20.99)

Dirty Laundry Vineyard Hush Rosé

“The Hush Rosé is comprised of several varieties, mainly Pinot Gris and Cabernet Sauvignon. The juices are processed separately, and also at different times of our vintage season, to provide complexity and flexibility with the style. The Pinot Gris is destemmed and crushed, and allowed to soak on their skins overnight in the cool night temperatures to allow all those luscious pear and peach flavors to soak into the juice.

The Cabernet Sauvignon is also destemmed, crushed and pressed immediately. We have the capability on our crush pad to fill our press while simultaneously pressing off the juice, which gives a delicate pink color and extracts berry flavors like the classic strawberry profile of Hush.”
