Time Wines: Chronos Precision and Evolve’s Premium Sparkling Program

4 Wines That Show Two Sides of the Okanagan

There’s something compelling about wineries that can successfully operate with two distinct identities, and Time Family of Wines leans into that contrast with confidence.

Chronos sits at the premium end, focused on structured, site-driven still wines with a polished, age-worthy edge; particularly across its red portfolio. Evolve, while often associated with fresh, approachable styles, is more accurately a premium sparkling house at its core. Alongside its vibrant Charmat-method wines, the program includes a growing tier of traditional-method sparkling wines aged 3–6 years, positioning Evolve well beyond entry-level and into serious BC sparkling territory.

Tasted side-by-side, these four wines show just how well that dual strategy works, spanning everything from a refined Pinot Gris to lively sparkling wines and an easy-drinking rosé.

Chronos Pinot Gris 2025

Sourced from Dragon Mountain Vineyard, this 100% Pinot Gris reflects a near-ideal Okanagan growing season: warm, even, and extended into fall, allowing for balanced ripening and strong flavour development. Hand-harvested fruit delivers both precision and texture in the glass.

Alc. 12.2% | pH 3.44 | TA 6.3 | RS 5.2

A polished, fruit-forward Pinot Gris with aromas of floral notes and subtle minerality. The palate leans generous, showing ripe pear, melon, and Meyer lemon zest, supported by a smooth texture and a clean, lingering finish. Nicely balanced between freshness and weight. 92 Points

Pairing: Grilled prawns, chicken piccata, or a summer peach salad.

Evolve Effervescence (NV)

A lively Méthode Cuvée Close sparkling built on Pinot Blanc (55%) with Ortega, Pinot Noir, and Chardonnay adding aromatic lift and structure. Sourced from multiple Okanagan vineyards, this is designed as an approachable, everyday bubbly with plenty of character.

Alc. 12% | pH 3.08 | TA 7.3 | RS 4.75

Fresh and inviting, with aromas of peach, pear, and lemon blossom. The palate is crisp and energetic, showing ripe melon, stone fruit, and Meyer lemon, with bright acidity keeping everything clean and refreshing. Easy-drinking but well put together. 90 Points

Pairing: Aperitif, sushi, or fish tacos.

Evolve Pink Effervescence (NV)

A playful, fruit-driven sparkling rosé blending Pinot Blanc, Ortega, Chardonnay, Pinot Noir, and a touch of Syrah for colour and lift. Crafted in the same Cuvée Close style, it leans bright, fresh, and crowd-friendly.

Alc. 12% | pH 3.05 | TA 7.4 | RS 5.0

Bright and expressive, with aromas of crushed berries and cranberries. The palate bursts with ripe strawberry and cherry soda, carried by lively bubbles and a crisp finish. Fun, energetic, and very easy to like. 91 Points

Pairing: Charcuterie, smoked salmon, or patio sipping.

Evolve Small Lots Rosé 2025

A small-lot, 100% Syrah rosé from Solmere Vineyard in Osoyoos. Whole-bunch pressed with no skin contact and fermented cool in stainless steel, this is all about purity, freshness, and early-drinking appeal.

Alc. 12% | pH 3.65 | TA 5.4 | RS 2.9

Evolve Small Lot Rosé glows in the glass with a brilliant peach-skin hue. Light and refreshing, showing wild strawberry, citrus, and fresh floral notes on the nose. The palate is crisp and lively yet softly textured, delivering juicy strawberry and watermelon wrapped in a silky mouthfeel that ends with a subtle citrus lift. Clean, dry, and very drinkable. 90 Points

Pairing: Niçoise salad, grilled chicken, or light pasta dishes.

Final Thoughts

Time Family Wines continues to sharpen its positioning with a clear two-lane approach: Chronos delivers a more polished, vineyard-driven expression, while Evolve spans both vibrant, approachable releases and an increasingly serious premium sparkling program. The consistency across this lineup stands out: clean winemaking, strong varietal character, and a focus on drinkability that fits exactly where today’s BC wine consumer is heading.
