TIME Winery releases two flavourful reds

TIME Winery is committed to creating wines that express the unique flavours of Okanagan wine country. Located in the former PenMar movie theatre; TIME Winery is a state-of-the-art downtown winery. The entire TIME Winery team has worked to ensure that the new crush pad, barrel cellar, custom fermentation hall, and onsite lab were built to ensure only the best quality wine, vintage after vintage.

TIME Winery, Evolve Cellars, and McWatters Collection were sold to Five Vines Cellars, the private family-owned business of Ron and Shelley Mayert in July 2020. TIME Winery & Kitchen remains the same, with sister winery Evolve Cellars and the McWatters Collection labels sharing the same roof. Chef A.K. Campbell runs the kitchen, and the McWatters family siblings, Christa-Lee and Darrien, stay on as general manager, and operations manager respectively. Winemaker Lynzee Schatz oversees wine production, and the entire team looks forward to welcoming everyone for a visit.

The Winemaker – Lynzee Schatz

Raised in Kelowna, Lynzee Schatz was introduced to wine through her mother, who was a budding wine aficionado and avid gardener. In 2006, Lynzee worked at Summerhill Pyramid Winery, where her inquisitive nature gained her the opportunity to start shadowing the cellar hands. These early experiences left Lynzee with a fascination for wine, planted the seed for her future career, and provided her first efforts in organic winemaking.

Lynzee has a Bachelor of Wine Science from Charles Sturt University in Australia. She has travelled widely, completing many vintages abroad including stints at Pisoni Vineyards and Winery in California, Domaine Chandon and Yeringberg in Australia’s Yarra Valley, and Tawse and Angels Gate in Ontario. Her travels have gained her extensive experience with sparkling wine production, and while at Yeringberg, she realized her love of farming; in particular, rearing lambs, minding sheep, and cattle work.

Lynzee returned to Canada in 2014 and for three years, split her time between making wine at Vancouver Urban Winery and brewing for their sister company, Postmark Brewing. Longing to bring her experience and education back to the Okanagan, Lynzee relocated to Penticton in August 2018.

When asked about her first 2020 vintages at Five Vines Cellars, Lynzee reveals “It was great! I had an amazing team that helped me craft intentional, varietal and super-expressive wines. She further explains, “Our fruit ripened perfectly, and we had plenty of nice weather. I am excited to share the wines with everyone.”

Schatz says that in the future, her goal is to be more involved in Okanagan winemaking research
and make wine more approachable for everyone

2018 Harvest

2018 was a difficult year in the Okanagan with Spring floods, dense smoke from summer wildfires and September rains. The moderate growing seasons resulted in many large clusters and healthy fruit. While September saw more precipitation than usual, October brought back the long, dry and sunny days to finish off the ripening period.

TIME Merlot 2018 ($25)

TIME Merlot 2018



The grapes were hand-picked, crushed and destemmed. Fermented in stainless steel tanks. Aged 18 months in French oak barrels.

Alcohol 14.2% | pH 3.80 | TA 5.3 |RS 2

The young Merlot shows aromas of cherries with savoury notes. This is a medium-bodied wine with flavours of red berry, plum, chocolate, toasty oak and sagebrush. The rich mouthfeel leads to a long finish. 89 Points

The Merlot paired deliciously with smoked ribs.

TIME Syrah 2018 ($40)

The grapes are from the Stark Vineyard in Osoyoos. The Syrah ages for 18 months in small French Oak barrels.

Alcohol 13.9% | pH 3.60 | TA 6.1 |RS 3.2

The complex Syrah opens with aromas of ripe blackberries and savoury notes. Big and soft tannins on the palate. Flavours of black currant, red plum and cherry with a hint of dark chocolate, black pepper and cinnamon on the long finish. An excellent BC Syrah. 92 Points.
